This month I have mainly been eating rösti. I have found that - the squeezing liquid out of the potato being too tedious - a reasonable drying-out step can be approximated by microwaving the grated potato for a minute or two before frying. Also, that it is good to put it in the pan and then go away and do something else (like blogging about it) rather than worrying it every couple of minutes ;)
Rösti goes well underneath baked beans; also underneath fried-egg-and-gravy, though I don't expect all of you to agree on that one.
